Tiger nut milk shake
STEP !
Put the tiger nuts in a bowl with water, so that they are completely covered, and leave them to soak for at least 8 hours, although ideally you should keep them like this for a whole day. Keep them in the fridge and change the water at least a couple of times.
Pour the tiger nuts into a colander, rinse them under a stream of water and let them drain.
STEP 3
Strain the paste you have obtained again, and in the resulting liquid add the chosen icing sugar or sweetener, try it and leave it to your liking. Straight to the fridge! As soon as it's cold, you can eat it.
​You must serve it very cold, yes or yes, it is perfect for the hottest months. Of course, remember that it only lasts in the fridge for 1 or 2 days, so if you prepare a large quantity you should freeze it or, better yet… drink it quickly! This is quite simple because it will surely not last long at home, it is delicious!
STEP 2
Now it's time to crush them, for this you can use a robot, or also a glass blender or a hand blender.
Blend them with half the water, until a thick paste is formed.
Strain the mixture through a mesh, gauze, coffee filter... whatever you can use to strain it without letting any lumps escape.
